In 1859, Giovanni Marco began an apprenticeship in a small bakery in Venice, Italy. That same year, Venice becomes part of the Italian confederation of Austria, per Treaty of Villafranca. To celebrate, Giovanni reimagined a well known almond and raspberry jam cake into three layers with the colors of the Italian . Years later he opened his own bakery, naming it "Forno Marco". He accidentally dropped a small piece of his tri-colored cake in a vat of dark chocolate, and the "Italian Rainbow Cookie" was born. The recipe for this popular cake made it's way through Ellis Island with the influx of Italian immigrants to New York in the early 20th century. Since then, Italian bakeries in New York have been a destination for rainbow cake, and part of the childhood memories of generations of New Yorkers. Now headed by heirs of the Forno Marco brand, Elisabetta & Giuseppe Marco partnered with Cacaoholic to offer their authentic Italian Rainbow Cake to fine bakeries and specialty shoppes worldwide.
